What Makes This Beef Unique?
Normally, our beef animals are butchered between 25-28 months of age for the best tenderness in steaks, roasts, and ground beef. However, this cow is older than our usual harvest age, meaning the beef will have an even bolder, more developed flavor. While tenderness may slightly decrease, the flavor intensifies, offering a depth you won't find in younger beef.

Our recommendation: save the filets, briskets, and chuck roasts for premium cuts, while we grind the remaining cuts into rich, flavorful ground beef. Once we receive your order, we will send more detailed instructions about what to expect if you have never gone through the process before, as well as our processing recommendations. Our goal is to make the entire process of ordering custom beef as streamlined and simple as possible for you. We will guide you along each step of the process.
We use several local butchers that are located within one hour of the Rockford area. Once we deliver the animal, you would talk directly with them and give them the details of how you wanted your meat cut and packaged. If you are unsure of exactly what to do, they will gladly walk you through the process. You would be responsible for the all the processing fees associated with your portion of the animal. Processing costs are usually $0.85 to $0.95 per pound hanging weight. You would pick up your meat from the processor at your convenience.
Typically, hanging carcass weight is 550 to 625 lbs for a whole animal. (Hanging weight refers to the weight of the animal once the hide and internal organs are removed. The meat and processing costs are based on this weight. The animal will now undergo further processing to debone and cut up the various cuts of meat.) All of our Red Devon animals have had a cut out yield of approximately 62-65% meat to bone ratio. This means that you are getting more meat per hanging weight and your meat price per pound goes down. By comparison, the feedlot industry standard is typically less than 60%.
- Pasture-aged whole cow — $5.45 per pound hanging weight ($950 nonrefundable deposit)
- Pasture-aged 1/2 cow — $5.75 per pound hanging weight ($500 nonrefundable deposit)
- Pasture-aged 1/4 cow — $5.95 per pound hanging weight ($250 nonrefundable deposit)
Example:
- 1/4 beef at 150# (hanging weight) x $5.95 per pound meat cost = $892
- Plus 150# (hanging weight) x $0.95 per pound (average) processing cost = $142
- Total 1/4 beef cost = $1034
- Deposit is credited toward your total cost
- Total freezer storage is approximately 3 cu ft for 1/4 beef
